There appears to be a link between Inflammation and sleep apnoea. The topic of inflammation is huge, we'll be including separate sections on this website specifically dealing with inflammation and some of the strategies to reduce it. 

This below paper highlights the typical culprits: Il-6 & TNF.

A great article that ties together sleep apnoea and diet. Supplementing with Omega-3 reduces TNF (see above articles). 

I would advocate considering omega-6 too, since there is interesting data on using it to reduce overall morbidity. Overall essential fatty acids are crucial, they help remyelinate the nerves (see the above article on neurocognitive decline and myelination).
